SINGING THE JAVA BLUES

A 30-year food services consultant is singing the blues in his new restaurant venture. Bisnow chatted with Chris Leavitt, one of the owners of Java Blues, a new coffeehouse and cafe in The Residences at Lavista Walk mixed-use development off Lavista Road. With blues music pipping through the 1,700 SF venue (he took over the lease of another defunct coffee shop), Chris says Java Blues was started as a real-world offshoot for the franchise of his restaurant consulting firm Fuzion Food Group (founded by famed pro wresting commentator ?Mean Green? Gene Okerlund) as a demonstration of the optimal food-service establishment. Fuzion demonstrates how mainly unorthodox dining places—such as cafeterias in nursing homes—can improve food quality, create healthier options, and better control costs, he says. While Java Blues became the consulting firm's testing ground, Chris says it developed into a viable business in its own right. ?That was one of the things for me that was critical; it is all about the service execution,? he says. Opened since August, Java Blues is now expanding into catering. |
