Restaurateurs Jeff  and Paula Conway have acquired Providence Caf in Charlotte and plan to redesign it to be Napa on Providence by early November. NAI Southern?s Billy Cooper, who repped the Conways, told us that as a restaurant market, ?Charlotte has experienced minimal growth in recent years. However, the right concept can flourish.?

Success is tricky in the restaurant game. About making a go of it in Charlotte, Billy adds that:

1) A successful restaurant is driven by quality fare, location and management, but the  essence is delivering a perceived value to the customer.

2)  The operator who succeeds is one who  realizes the evolution of a concept is ongoing and has the foresight to continually make the experience better.

 

3)  Operators who lack  that ability would be better suited to partner with a national chain that has proven methods of success.
