The hall — planned to open next year — will serve as the American iteration of Bottura’s Refettorio Ambrosiano, which utilized leftovers from the 2015 Milan Expo to feed those in homeless shelters and children in poverty. In the expo’s five-month period, Refettorio cut down on 15 tons of food waste.
