Suzuki Capital: Hospitality Update
Suzuki Capital director Colby Swartz tells us that he’s often referred to as “the dream crusher,” but we know that in the hospitality biz you have to be cruel to be kind. Colby says that many operators come to him for advice on how to open/expand or close/consolidate. Colby’s specialty: financing a hospitality business or finding a location. The difference between a new operator and an experienced operator: the latter has managed expectations and is realistic. Colby continues to see restaurants leaning toward fast casual, smaller floor plates, and expansion outside of NYC.
