Park Kitchen Abandons Gratuity As Minimum Wage Hike Looms

Park Kitchen is one of dozens of restaurants across the country ditching traditional gratuities. Employees are now trained across many roles to eliminate the classic model including front and back of the house, The Oregonian reports.
The driving force behind this change is the age-old income disparity between servers and cooks, expected to worsen as the minimum wage increases. Portland’s minimum wage will increase this summer, the first of many hikes on the way to $14.75 in 2022. [TO]
