Welcome to Dirty Water
The Midmarket restaurant that's been more than two years in the works finally debuted in the Twitter building this weekend, marking the first of three major food openings at Market Square.
By the numbers, there's more than 200 seats, 52 beers on tap and 114 wines by the glass. And soon the upscale eatery will start making its own beer via a seven-barrel brewery system on site. Last week we snapped bar manager Zachary Taylor, RN Field project manager Shanit Beitpoulice, Dirty Water partner Bernadette Manzano, RN Field president John Grcina, and Dirty Water founder and GM Kristian Cosentino.
Zachary tells us he's excited to integrate these Candy Cap mushrooms in cocktails. He says the only ode to Twitter on the cocktail list is called "140 Characters." Funny enough, Twitter decided to elongate its character count soon after he coined the drink.
Kristian ended up driving up to Oregon to hunt out dining tables, which he got at a big discount. After the Pride Parade on Sunday, Mayor Ed Lee stopped at Dirty Water to celebrate its official opening. Kristian tells us a huge flock of the kitchen followed him from the Press Club. There's over 6k SF inside and 1,700 SF outside.
There's also a secret room in the back with a bar that could be rented out for intimate gatherings. Kristian tells us the team is already thinking about opening another Dirty Water. The restaurant originally almost opened across the street on Fell and Market, but when this space popped up he pounced. Shanit first met the Dirty Water partners three years ago while working out at a Sports Club LA. "Everything in construction is knowing where your opportunity is and be ready for it," she tells us.
One of the most expensive aspects of the project isn't even inside the restaurant. Since 1355 was built with office, not restaurant, tenants in mind, the team needed to spend six figures to build out these ducts right outside in order to vent out the ovens and dishwashers.
