The best word to describe Juan’s work is innovative. Chef/Restaurateur José Andrés continues to swing doors open to new restaurants and Juan has to keep up by rolling out cutting edge beverage programs. He tells us he’s working on José’s upcoming concept, China Chilcano opening this January in DC. Look for Peruvian native ingredients and spirits.
