The Philly invasion continues: La Colombe Torrefaction (French for "roasting"), another Philly institution, has announced plans to open a coffeeshop in DC's Shaw neighborhood. Co-founders Todd Carmichael and Jean Philippe (JP) Iberti have secured a location at922 N St NWin Blagden alley, next to Rogue 24. While the space will require a good deal of construction before the shop opens later this year, JP tells us that it has a "wooden door with an artistic tag on it that I hope we can keep."
Todd and JP met in Seattle while still in school, bonding over a shared passion for coffee. After 18 successful years, Shaw will be La Colombe's seventh cafe in the US, though their roaring wholesale business has spread their fame well beyond their cafes. In DC, Blue Duck Tavern recently started serving La Colombe. And not only will Starr's Le Diplomate be serving it, the restaurant's coffee program will be managed by La Colombe-trained baristas.
